This role is responsible for auditing, documenting, and enforcing USDA and facility regulations to ensure food safety and quality. The position involves monitoring Standard Operating Procedures (SOPs), Sanitation Standard Operating Procedures (SSOPs), Good Manufacturing Practices (GMPs), and performing Hazard Analysis and Critical Control Points (HACCP) procedures to ensure compliance with federal regulations. The individual will work with the Food Safety and Inspection Service (FSIS)/USDA, present records as requested, and assist in gathering data for investigations. This role also involves working closely with production associates to monitor meat product Acceptable Quality Limit (AQL) standards and specifications, correcting deficiencies, and notifying management of any violations. Maintaining lab equipment through proper cleaning and regular maintenance is also a key responsibility.
