About The Position

Mason's Meats is establishing its production operation in Austin, Texas, and is seeking individuals to play a hands-on role in shaping the systems, standards, and culture to support the business as it grows. The Food Safety & Quality Manager / HACCP Coordinator will own the food safety and quality systems for the Austin beef jerky operation. This role involves working closely with production and company leadership to build practical, scalable systems that support safe, consistent production. It's an opportunity to shape the site’s food safety culture, controls, and operating standards from an early stage. This hands-on, plant-floor role covers HACCP, process validation, verification, documentation, USDA/FSIS readiness, and day-to-day quality oversight, with the authority to place product on hold whenever food safety, quality, or compliance is in question.

Requirements

  • Demonstrated food safety or quality experience in meat processing, food manufacturing, or a closely related industry.
  • Working knowledge of HACCP, GMPs, SSOPs, sanitation, corrective actions, and traceability.
  • Strong documentation, organizational, communication, and analytical skills, with close attention to detail.
  • Comfort working directly on a production floor and making product hold or escalation decisions.
  • Ability to train employees and consistently reinforce food safety standards.
  • Must obtain a current food handler certificate within the required timeframe after hire.

Nice To Haves

  • Experience in a USDA/FSIS-inspected meat or poultry facility, including working directly with USDA inspection personnel.
  • Experience with ready-to-eat meat, jerky, dried meat, or shelf-stable food.
  • Formal HACCP training applicable to meat processing.
  • Experience with water activity, process validation, environmental monitoring, or shelf-life programs.

Responsibilities

  • Develop, maintain, verify, and reassess HACCP plans, hazard analyses, SSOPs, prerequisite programs, and supporting controlled documents.
  • Coordinate validation and supporting documentation for lethality, drying, water activity, shelf stability, and other required process controls.
  • Review food safety, sanitation, quality, and production records; investigate deviations; manage corrective actions; and make product hold and release decisions.
  • Maintain supplier, receiving, lot, label, and finished-product traceability controls and lead mock recalls.
  • Maintain pre-operational sanitation verification, chemical control, environmental monitoring, and applicable calibration programs.
  • Keep required records organized and inspection-ready and serve as a primary food safety contact during regulatory activities.
  • Train employees on GMPs, HACCP responsibilities, sanitation, traceability, product holds, and food safety recordkeeping.
