About The Position

The Fish Cutter is responsible for preparing, cutting, portioning, packaging, and presenting seafood products for sale in a Japanese retail market environment. This role supports the company’s commitment to providing high-quality seafood products while maintaining excellent food safety, sanitation, customer service, and presentation standards. The Fish Cutter works closely with the seafood, sushi, and kitchen teams to ensure products are prepared accurately, efficiently, and according to company quality expectations.

Nice To Haves

  • Previous experience cutting fish or working in a seafood department preferred
  • Knowledge of Japanese seafood products and fish varieties preferred
  • Basic knife skills and understanding of seafood handling techniques preferred
  • Experience with Japanese-style fish cutting and portioning techniques
  • Familiarity with sashimi-grade seafood handling procedures
  • Understanding of seafood yield, shrink, and waste control practices
  • Ability to identify common seafood species and quality standards

Responsibilities

  • Cut, trim, fillet, portion, and prepare fish and seafood products according to company standards
  • Process whole fish into retail-ready portions using proper knife techniques and equipment
  • Prepare seafood products for display cases, packaged sales, and culinary production
  • Ensure seafood displays remain clean, organized, fully stocked, and visually appealing
  • Monitor seafood quality, freshness, and expiration dates
  • Follow all company food safety, sanitation, and HACCP procedures
  • Maintain compliance with all local, state, and federal health regulations
  • Properly label, wrap, package, and rotate seafood products using FIFO procedures
  • Assist with receiving, inspecting, and storing seafood deliveries
  • Maintain clean workstations, cutting tools, sinks, storage areas, and equipment
  • Safely operate knives, scales, slicers, and seafood processing equipment
  • Communicate inventory concerns, product shortages, and quality issues to leadership
  • Assist customers with seafood questions, product recommendations, and preparation suggestions
  • Support sushi, kitchen, and prepared foods departments as needed
  • Participate in inventory counts and waste tracking procedures
  • Attend required training sessions and department meetings
  • Perform other duties as assigned by management
