About The Position

We are seeking a skilled and reliable Fish Cutter to join our seafood processing team. In this role, you will be responsible for preparing high-quality seafood products by filleting, cutting, and portioning fish according to company standards. You will work in a fast-paced, temperature-controlled environment alongside a team that is committed to quality, safety, and efficiency. This position is ideal for someone who takes pride in craftsmanship, pays close attention to detail, and thrives in hands-on work.

Requirements

  • Proven experience in fish cutting, filleting, and seafood processing
  • Strong knowledge of seafood quality standards and handling practices
  • Skilled in the use and maintenance of knives and cutting equipment
  • Ability to work efficiently in a physically demanding role, including standing for long periods and performing repetitive tasks
  • Capable of lifting and carrying up to 50 lbs
  • Comfortable working in a cold, wet environment (35°F–40°F)
  • Flexible availability, including early mornings and weekends
  • Strong attention to detail and commitment to quality
  • Reliable, safety-conscious, and able to follow strict procedures and guidelines

Responsibilities

  • Fillet, cut, and process whole fish into fillets and portioned cuts, with a focus on groundfish and salmon
  • Assess seafood quality based on shape, texture, and smell to ensure only top-quality product is processed
  • Use knives, sharpening tools, and processing equipment safely and efficiently
  • Maintain consistent product specifications in line with company standards
  • Keep the cut room clean, organized, and free of debris or hazards
  • Follow all food safety and sanitation procedures, including proper handwashing and equipment cleaning
  • Adhere to FDA and company guidelines for seafood processing and production
  • Comply with all safety protocols, company policies, and operational procedures
  • Assist with additional tasks as assigned by supervisors
