The F and B Director is responsible for directing and ensuring Food & Beverage standards and procedures are followed, managing staff schedules and department budget, and ensuring timely response to guest needs. This role involves resolving guest complaints, reviewing service scores, and ensuring staff adherence to guest service basics. The Director will also be knowledgeable about hotel facilities, services, and the city to assist guests. In Human Resources, the role includes directing recruiting, hiring, training, development, and retention of Food & Beverage staff, communicating performance standards, ensuring required training occurs, and coaching, counseling, disciplining, and terminating staff as appropriate. The Director will conduct performance and salary reviews, ensure policies and procedures are followed, and promote a harassment-free work environment. In Sales/Profitability, the Director will develop and manage the Food & Beverage budget and business/marketing plan, market Food & Beverage offerings, investigate new menus and service methods, and develop menus, package deals, promotions, and presentations. They will ensure food and beverage costs are within budget, review vendors, and develop action steps to correct expense problems. For Life Safety/Risk Management, the Director will assist the General Manager with hotel life safety, promote an accident prevention program, ensure sanitary, safety, security, and emergency procedures are in place and followed, and notify the General Manager of potential liabilities. In Asset Management, the Director will walk operations daily, ensure associates are trained in cash handling and credit card transactions, maintain controls for financial assets, ensure preventative maintenance programs are in place, inspect Food & Beverage areas and inventories, and collaborate with the Corporate Office. In Leadership, the Director will oversee all facets of Food & Beverage services, stay updated on brand standards and competition, provide leadership, and ensure compliance with policies, brand standards, and regulations. For Communication, the Director will ensure communication consistency, maintain a positive attitude, foster effective two-way communication, conduct staff meetings, and communicate plans with peers and superiors. In Administration, the Director will compile and analyze reports, complete reporting accurately and timely, perform special projects, and assist the General Manager with budgets and forecasts.
