The Executive Sous Chef has an overall responsibility for the efficient and effective running of the kitchen and food production outlets, ensuring operating costs are minimized. This role is responsible for the execution of all Omni Hotel and company policies/procedures, ensuring that all services provided achieve the established standards within the agreed budgetary controls. The Executive Sous Chef will assist the Executive Chef in budgeting, including food cost and payroll, and control all overheads to achieve the food cost budget throughout the year. They will report all variances from the actual budget with reasons and recommendations for remedial action. This position advises the Executive Chef on all matters relating to the kitchen area and ensures a high standard of cleanliness and hygienic practice throughout the kitchen. The Executive Sous Chef ensures guest satisfaction with the smooth and effective running of the day-to-day operation and maintains control of the standards for purchasing and receiving items, working closely with the storeroom manager and food and beverage controller. They will test and evaluate products for quality, paying particular attention to yield, holding qualities, market price, and wastage usage of leftovers. The role involves constantly inspecting all food service sections during service time to ensure correct standards are maintained and is responsible for control of equipment and scheduling maintenance. Any other duties as required by management will also be performed.
