About The Position

The Executive Sous Chef is the Executive Chef's right hand and the engine of the kitchen. You run the line, hold the standard when the chef is away, and translate the culinary vision into flawless nightly execution. You'll help build and train the brigade, own day-to-day ordering and food cost, run line checks and station setups, and keep the kitchen moving cleanly through everything from quiet member days to full-throttle events. When the chef is out, the kitchen is yours. Expect to work every station, jump on the pass when service demands it, and coach cooks in real time. You'll enforce sanitation and safety standards and keep quality tight when the tickets stack up. This is a private club, so consistency and a personal touch matter. You'll help deliver on member preferences and dietary needs and make sure every plate leaving the pass meets the standard members expect.

Requirements

  • 4+ years as a Sous or Executive Sous Chef in fine dining or luxury hospitality
  • Track record running a kitchen independently when needed
  • Experience with both high-volume events and à la carte service
  • Ordering, receiving, and food-cost management experience
  • Scheduling and labor-planning experience for F&B functions and daily service
  • Food-safety certification (ServSafe or equivalent)

Nice To Haves

  • Club or resort culinary experience preferred
  • Formal culinary training or a diploma from a recognized institution preferred

Responsibilities

  • Line leadership and full kitchen management in the chef's absence
  • Strong execution across every station and cooking discipline
  • Supporting menu and recipe development, and presenting new dishes for tastings
  • Day-to-day ordering, receiving, inventory, and food-cost management
  • Quality-control checks on goods received and every plate, per HACCP
  • Line checks, station setups, prep organization, and par management
  • Training, coaching, and developing cooks in real time
  • Menu execution for dietary needs and member preferences
  • Member and guest interaction — gathering feedback on food and service and resolving concerns with care
  • Sanitation and safety compliance (ServSafe / HACCP)
  • Right-sizing schedules — adequate coverage for events and daily service without overstaffing
  • Discretion and respect for member privacy at all times
  • Calm, decisive problem-solving under event pressure
