About The Position

The Executive Sous Chef for TAP at MGM Grand Detroit plays a pivotal role in shaping an exceptional kitchen experience. This position partners closely with the Executive Chef to inspire, guide, and elevate a high-performing culinary team. The role drives both operational excellence and financial success, ensuring every dish reflects the quality and innovation of the MGM brand. Responsibilities include mentoring kitchen staff, optimizing recipes, inventory, and scheduling, and delivering a top-tier dining experience.

Requirements

  • Bachelor's degree or equivalent experience
  • Two years of prior relevant experience preferred

Nice To Haves

  • Previous experience managing team members under a collective bargaining agreement preferred

Responsibilities

  • Lead and oversee daily restaurant kitchen operations, fiscal budgets, labor productivity, scheduling, inventory control, and guest service standards.
  • Execute and develop a menu strategy to produce short-term profitability.
  • Execute on the restaurant’s business plan and assist Executive Chef with developing and executing tactics to achieve goals and targets.
  • Maintain the highest standards of health, sanitation and cleanliness within all areas of the kitchen.
  • Assist the Executive Restaurant Chef with managing Human Resources responsibilities for the kitchen team to include: creating a work environment that promotes teamwork, performance feedback (coaching and counseling), recognition, mutual respect and employee satisfaction.
  • Interacts with guests to ensure satisfaction and enjoyment of dining experience.
  • Work alongside the service team to ensure a seamless service experience between kitchen and dining room.
  • Maintains excellent knowledge of venue’s food & beverage products, menu items and equipment used to perform duties.
