About The Position

Lombardi Cucina Italiana is a premier dining destination dedicated to delivering exceptional Italian cuisine, impeccable hospitality, and an unforgettable guest experience. We are seeking an experienced Executive Sous Chef who shares our passion for culinary excellence and thrives in a high-end, fast-paced kitchen environment. The Executive Sous Chef is the second-in-command of the culinary team and works closely with the Executive Chef to oversee all kitchen operations. This leader is responsible for maintaining exceptional food quality, mentoring and developing the culinary team, ensuring operational efficiency, and upholding the highest standards of cleanliness, consistency, and execution. The ideal candidate has a minimum of five years of progressive kitchen leadership experience, with preferred experience in upscale Italian restaurants.

Requirements

• Minimum 5 years of culinary leadership experience in an upscale or fine dining restaurant.
• Italian cuisine experience strongly preferred.
• Strong knowledge of classic and contemporary Italian cooking techniques.
• Proven ability to lead large kitchen teams in a high-volume environment.
• Excellent organizational, communication, and time management skills.
• Strong understanding of food costing, inventory management, and labor controls.
• Ability to maintain composure and make sound decisions during busy service periods.
• Current food safety certification (or ability to obtain upon hire).
• Flexible schedule, including evenings, weekends, and holidays.

Responsibilities

• Assist the Executive Chef in the daily management of all kitchen operations.
• Lead, motivate, coach, and develop culinary team members to achieve excellence.
• Ensure every dish is prepared and presented to the highest quality standards.
• Maintain consistency in recipes, plating, portioning, and execution.
• Oversee food preparation during service while maintaining a calm, organized kitchen.
• Manage food, labor, and operating costs while minimizing waste.
• Assist with inventory, ordering, receiving, and vendor relationships.
• Ensure compliance with all health, sanitation, and food safety regulations.
• Train new team members and reinforce company standards and procedures.
• Foster a culture of teamwork, professionalism, accountability, and continuous improvement.
• Step into the Executive Chef's role when needed to ensure seamless operations.
