About The Position

Responsible for overseeing the service of food & beverage outlets within the Petoskey casino as directed by the Executive Chef. Leading, motivating, training and developing front of house F&B staff, to work as an effective and enthusiastic team. Managing the team to improve sales and the quality of F&B services throughout all areas. Work in close collaboration with the marketing team to ensure the business is marketed well, in line with the overall vision, and is pushed to its maximum potential. Responsible for ensuring the highest level of customer satisfaction is achieved and excellent service is being delivered by the Team Members on their assigned shift.

Requirements

  • Associates degree in relevant field and three (3) years’ experience in restaurant management, or high school diploma or equivalent and five (5) years in restaurant & bar management.
  • Knowledge of Wines and Mixology required.
  • Knowledge of all phases of restaurant & bar services.
  • Must complete TIPS training and certification within thirty (30) days of employment or provide proof of current certifications and must keep current.
  • Excellent verbal and written communication skills.
  • Excellent organizational skills and attention to detail.
  • Excellent time management skills with a proven ability to meet deadlines.
  • Excellent leadership abilities.
  • Strong analytical and problem-solving skills.
  • Must have excellent computer skills, proficient with Microsoft Office products, and ability to quickly learn specialized software packages.
  • Proficiency in point of sales systems, liquor control systems and purchasing systems.
  • Computer knowledge of current restaurant yielding systems.
  • Must have basic math skills.
  • Must read, write, and speak English fluently.
  • Must be flexible with shift and days off.
  • Must be able to meet physical requirements such as significant lifting up to fifty (50) lbs., bending, reaching, stopping, pushing, and pulling.
  • You may be required to pass a skills assessment test to determine if you meet the minimum qualifications of the position.
  • Exposure to loud and continual noise levels and a smoke-filled environment.
  • Must be able to obtain a gaming license in accordance with the regulations established by the LTBB Gaming Regulatory Commission and be able to serve in the position under any other applicable law.

Responsibilities

  • Has authority to hire, terminate, promote, demote, transfer, provide training opportunities, recommend merit increases, evaluate performance, create and adjust performance standards, create and/or delegate staff scheduling, invoke disciplinary action and demonstrate for the fair and equitable treatment of all Team Members.
  • Fosters a culture of learning and development, supports individual growth through continuous feedback to achieve personal and professional goals.
  • Exhibits Leadership skills through the continuous evaluation, guidance, and encouragement of Team Members.
  • Manages day-to-day operations including guest service guidelines and standards, cash handling, meeting the expectations of the guests, staffing levels and scheduling.
  • Conducts daily pre-shift meetings.
  • Assist and work with the Executive Chef on creating food menus.
  • Maintain a positive and professional approach with Team Members and guests.
  • Collaborate with the Executive Chef and senior management to ascertain special requirements for large volume events and occasions.
  • Develop promotional programs to improve average check.
  • Visit staff on all shifts to ensure enhanced communication among all Team Members and Management.
  • Fill in wherever needed when short on staff.
  • Must utilize Point of Sales (POS) systems, input menus, and process all reports as necessary.
  • Conducts daily inspection of dining and bar areas.
  • Adheres to and enforces regulatory, departmental and company policies and procedures.
  • Track and analyze guest comments, feedback, online reviews and share them with the team and appropriate members of management.
  • Takes proactive approaches when dealing with guest concerns.
  • Monitors guests’ consumption of alcohol and intervenes as necessary according to company policy.
  • Maintains knowledge of all current and upcoming promotions and events at Odawa Casino Resort.
  • Required to work liquor control system and troubleshoot if necessary.
  • Works with Finance and IT teams to ensure that all revenue is captured and reported in an accurate relevant manner.
  • Communicates variances from the established budget to the Executive Chef.
  • Complete the required daily financials and reports.
  • Work closely with Security and Surveillance to maintain processes and integrity of policy and service in a highly regulated environment.
  • Recommend process and customer service improvements, innovative solutions, policy changes and/or major variations from established policy.
  • Responsible for beverage & dining room equipment needs and maintenance.
  • Place orders for dining rooms and bars.
  • Conducts monthly inventory for all dining and bar areas.
  • Maintain a clean, organized, safe and comfortable work environment for Team Members and guests.
  • Process payroll through the company approved system weekly.
  • Attend all meetings as required.
  • Complete all required training satisfactorily.
  • Always maintain the highest level of confidentiality.
  • May work at other properties as needed.
  • Perform all other duties as assigned within the scope of the position.
