About The Position

Direct and oversee all food service operations. This role requires the ability to perform all functions of supervised positions and ensures that all kitchen employees are trained in all aspects of food preparation and presentation according to food & beverage department specifications. The Executive Chef is responsible for executing cost control, waste control, inventory and overhead control in all areas of Food and Beverage, and for creating and following budget guidelines according to policy. Assures that proper sanitation procedures are implemented and carried out to state and local health standards. Trains all supervisors and supporting staff in administrative skills and the art of cooking. Interprets and carries out multiple catered functions and regular dining room activity at the same time. Maintains correct and cost-effective menus and correct banquet schedule calendar. Maintains communications between all staff concerning scheduling of food service employees. Follows correct policy and procedure, disciplinary actions and schedules employee meetings ensuring the consistent improvement of employee incentive and moral. Responsible for menu creation, organization and planning, ordering and product control. Maintains the highest quality standards for our guests and employees. Maintains knowledge of all events in the property as a whole. Attends and/or facilitates all mandatory meetings and training. Maintains confidentiality at all times. Is sensitive to Native American Culture. Operates within the parameters of the Leech Lake Gaming Human Resource Policy, Departmental Policy Manual and all Tribal Internal Controls (TICs), and all other applicable regulations. Secures the assets of Leech Lake Gaming and the Leech Lake Band of Ojibwe. Performs other duties as assigned.

Requirements

  • Experience managing multi-level departments
  • Knowledge of food quality standards
  • Knowledge of food cost, inventory and budgeting
  • Buffet, full service, catering and room service experience
  • Excellent communication skills
  • Ability to work independently
  • Knowledge of federal and state sanitation guidelines.
  • Physically capable of remaining on feet for long periods of time.
  • Subject to internal working conditions, including a smoking environment.
  • Must be able to lift up to 50 lbs.
  • High School Diploma or General Education Equivalency (GED) with some culinary or management coursework.
  • good computer skills required
  • Must meet Tribal/State compact licensing requirements, pass criminal background check and submit to drug testing.

Nice To Haves

  • Culinary degree or Associates degree in Management
  • Minimum of five years of progressively responsible supervisory experience in a professional kitchen environment
