About The Position

Proof of the Pudding, an award-winning catering company, is expanding its Sports and Entertainment Food & Beverage Services and has partnered with the Credit Union of Texas Event Center. They are seeking an Executive Chef to oversee the culinary program. This role will manage all culinary aspects of premium hospitality and concessions during events, including sporting events, catering, concerts, and other special occasions. The Executive Chef will provide hands-on leadership to ensure the kitchen operates efficiently, delivers exceptional culinary creations, maximizes revenue, and controls expenses.

Requirements

  • 8+ years in a leadership culinary role
  • Knowledge of Microsoft Office, internal and external email communications, and purchasing procedures
  • Impeccable integrity for the business, the community, and the Proof of the Pudding Team
  • Self-motivation, desire to learn, and enthusiasm for working in a fast-paced, demanding, collaborative environment
  • Interpersonal skills and demeanor for maintaining a safe, equitable, and inclusive work environment

Responsibilities

  • Plan and execute game-day and event menus.
  • Maintain a safe, secure, and healthy environment by establishing, following, and enforcing sanitation standards and procedures; complying with legal regulations; securing revenues; and maintaining security systems.
  • Manage and work closely with the General Manager to understand event details, including custom menus, event setup, and event specifics.
  • Responsible for all culinary aspects of gameday food service areas.
  • Oversee the total execution of events and food service while maintaining the highest level of food quality and presentation.
  • Manage purchasing and inventory for all culinary operations.
  • Meet venue financial objectives by forecasting requirements, preparing an annual budget, scheduling expenditures, analyzing variances, and initiating corrective actions.
  • Create weekly financial reporting, including declining balance, invoice tracking, and labor vs. sales reports.
  • Develop, implement, and communicate creative menu items that adhere to the Proof of the Pudding standard of innovation and excellence.
  • Manage financial goals and food cost while maintaining and tracking the venue’s budget.
  • Responsible for training, accountability, and scheduling of the culinary staff.
  • Work with the HR team to ensure schedules for FOH & BOH are concurrent with scheduled events.
  • Lead and coach the culinary department to develop a strong and growing team.
  • Perform other related duties as needed.
