The Executive Chef plans, develops, and implements organizational policies and goals for property culinary venues in conjunction with the Director of Food and Beverage. This role ensures integrity and consistency across all culinary aspects, including presentation, cleanliness, inventory, staffing, and guest service. The Executive Chef analyzes budgets, determines operating budget allocation, and directs the promotion of products and services to develop new markets and maintain a competitive position. They interpret financial reports, ensure budgeted revenues and profits are achieved, and formulate department budgets for profitability. This position is responsible for the administration of management systems, accounts payable, accounts receivable, payroll, and scheduling. The Executive Chef confers with administrative personnel, prepares directives for the Food and Beverage Director, and oversees cuisine preparation according to menu specifications. They are responsible for interviewing, hiring, training, and managing kitchen staff, recommending personnel actions, and prioritizing work activities. Additional duties include promoting the organization in industry associations, preparing show pieces for culinary events, planning menus considering seasonal and local availability, and training staff on guest service skills. The Executive Chef ensures equipment is maintained, inspects facilities for health and safety compliance, tastes prepared foods, maintains food lists, coaches team members, monitors business trends, implements cost-saving opportunities, and collaborates with the Marketing Department on strategy and promotions. They develop and maintain guest service procedures, monitor service trends, resolve guest complaints, anticipate guest needs, and manage difficult situations while recognizing team members for excellent service.
