Dumpling Prep (Trainee)
About The Position
As a Dumpling Prep / Trainee, you are part of the heart of the Din Tai Fung kitchen. In this role, you prepare, assemble, fold, and steam the dumplings that our guests know and love. You’ll help showcase the star of our menu while playing a key role on the kitchen team and in the overall guest experience. Dumpling Prep / Trainees are responsible for preparing dumplings from start to finish. This includes measuring and cutting dough, rolling skins, stuffing, sealing, arranging, and steaming dumplings, while ensuring proper meat and allergen identifiers are added. You’ll also help maintain a clean and organized dumpling room, label items according to procedures and regulations, and participate in monthly staff and dumpling meetings as part of your development.

- Applicant must be 18 years of age or older and able to provide documentation to work in the United States legally
Nice To Haves
- Dumpling experience is not required
- Experience in prep, specifically with dough (pastry, pizza, etc.) is a plus
Responsibilities
- Prepares, measures, and cuts dough
- Rolls dumpling/bun skins
- Stuffs, closes, and arranges dumplings/buns in a steamer
- Adds meat and allergen identifiers
- Steams dumplings/buns
- Maintains a clean working space and dumpling room
- Labels all items in accordance with regulations and procedures
- Attends monthly staff and dumpling meetings
- Keeps all kitchen areas clean and sanitized
- Organizes items within the walk-in coolers and freezers
- Assists with regular deep cleaning of the kitchen
- Maintains confidentiality regarding all proprietary information, including but not limited to recipes and Standard Operating Procedures (“SOP’s“)
