Requirements

  • Must be able to perform the essential functions of this job successfully.
  • Must be able to work days and/or nights, both weekdays and weekends.
  • Must be able to work holidays and overtime, especially during busy periods.
  • Must be able to operate all assigned equipment safely and as designed.
  • Must be able to sort and wash all soiled dishes, glass and flatware using proper cleaning procedures and equipment.
  • Must be able to load and unload china, glass and flatware from dishwasher to their appropriate storage area.
  • Must be able to maintain dish machine at all times and ensure temperature is correct before using.
  • Must be able to keep breakage to a minimum using proper storage and rackage.
  • Must be able to keep all pots, pans and large cooking utensils clean.
  • Must be able to transport wares from dishwashing area and kitchen.
  • Must be able to maintain a clean, dry and safe dishwashing area and kitchen.
  • Must be able to monitor and maintain cleanliness, sanitation and organization of assigned station and service areas.
  • Must be able to empty trash bins and scrub and disinfect trash bins as necessary.

Responsibilities

  • Provide clean plates, glass and flatware to entire restaurant and banquet staff in a timely, efficient manner.
  • Assist kitchen with food preparation responsibilities.
  • Assist in maintenance of kitchen and employee breakroom.
  • Keep kitchen in compliance with Hilton cleanliness standards.
  • Complete opening duties as assigned, including setting up and organizing dishwashing area, cleaning remaining dishes, removing and emptying trash bins, and setting up and breaking down employee cafeteria.
  • Complete closing duties as assigned, including leaving dishwashing area clean, dry and free from dirty dishes, removing and emptying trash bins, and setting up and breaking down employee cafeteria.
  • Operate all equipment assigned to you safely and as designed.
  • Sort and wash all soiled dishes, glass and flatware using proper cleaning procedures and equipment.
  • Load and unload china, glass and flatware from dishwasher to their appropriate storage area.
  • Maintain dish machine at all times and ensure temperature is correct before using.
  • Keep breakage to a minimum using proper storage and rackage.
  • Under direction of Supervisor and time permitting, assist with stocking of incoming supplies and perishable items, preparation of food items as needed, and additional cleaning of the entire back of the house.
  • Keep all pots, pans and large cooking utensils clean by washing in large double sinks, utilizing proper cleaning procedures as set by Hilton standards.
  • Transport wares from dishwashing area and kitchen.
  • Maintain a clean, dry and safe dishwashing area and kitchen.
  • Monitor and maintain cleanliness, sanitation and organization of assigned station and service areas.
  • Empty trash bins and scrub and disinfect trash bins as necessary.
  • Other duties as assigned by supervisor.
