JOB SUMMARY: The Director of Outlets is responsible for the day-to-day leadership and performance of Hotel Californian’s assigned food and beverage outlets, including Goat Tree Café, The Knock Restaurant, In-Room Dining, DJINN Lobby Bar, and Tan Tan Pool. This position leads outlet managers and teams to deliver exceptional guest experiences while driving operational excellence, associate engagement, revenue growth, and profitability.

Requirements

  • Minimum of five (5) years of progressive Food & Beverage management experience, preferably within a luxury, lifestyle, resort, or high-volume hotel environment.
  • Multi-outlet management experience and previous experience leading managers or supervisors strongly preferred.
  • Demonstrated experience with P&L management, budgeting, forecasting, labor management, cost controls, and revenue generation.
  • Proven ability to develop leaders, build high-performing teams, and drive accountability and operational results.
  • Strong business acumen, communication, organizational, decision-making, and problem-solving skills.
  • Working knowledge of restaurant POS, reservation, scheduling, and other relevant hospitality systems.
  • Knowledge of food safety, sanitation, responsible alcohol service, and applicable workplace and health regulations.
  • Ability to work a flexible schedule based on business needs, including mornings, evenings, weekends, holidays, and special events.
  • CA food handler’s card is required or the ability to obtain with the first 30 days of employment.
  • RSB card is required or the ability to obtain with the first 30 days of employment and be minimum of 21 years old.

Nice To Haves

  • Multi-outlet management experience and previous experience leading managers or supervisors strongly preferred.

Responsibilities

  • Provide leadership, coaching, and accountability to outlet managers, supervisors, and associates while fostering a positive, professional, and high-performing team culture.
  • Oversee daily operations of all assigned outlets, ensuring consistency in service, cleanliness, product quality, outlet readiness, and overall guest experience.
  • Manage outlet financial performance, including revenue, labor productivity, cost of goods, operating expenses, forecasting, inventory, and established profitability goals.
  • Develop and execute strategies to drive outlet revenue, average check, guest capture, profitability, and overall business performance.
  • Partner with Culinary leadership on menu development, menu engineering, product quality, pricing, seasonal offerings, and operational execution.
  • Monitor guest feedback and service performance, identify trends and opportunities, and implement improvements to enhance guest satisfaction and service delivery.
  • Ensure appropriate staffing and scheduling levels based on business volumes, hotel occupancy, events, and forecasts while maintaining established labor targets.
  • Recruit, train, coach, and develop outlet leadership and associates while supporting performance management and succession planning.
  • Collaborate with Sales & Marketing, PR, Culinary, and other departments on outlet promotions, programming, activations, entertainment, and special events that drive revenue and enhance the guest experience.
  • Maintain productive relationships with third-party vendors, entertainment partners, and suppliers supporting outlet operations and programming.
  • Ensure compliance with Hotel Californian policies and all applicable food safety, sanitation, responsible alcohol service, cash handling, workplace safety, and local/state regulations.
  • Maintain a visible leadership presence throughout the outlets, particularly during peak business periods, special events, weekends, and holidays.
