About The Position

The Dietary Manager is responsible for the overall proper and safe functioning of the dietary department. This role involves overseeing all aspects of the department, including clinical responsibilities, quality assurance, budget management, and staff supervision. The Dietary Manager also functions as a teacher, training personnel to ensure operations meet required practices and nursing home standards, and works harmoniously with other departments.

Requirements

  • Must have completed, or be enrolled in an approved Dietary Manager's Course.
  • Must have training in food service.
  • Must be able to read, write and follow oral and written directions.
  • Must have knowledge of principles of dietetics, food sanitation and service.
  • Must be familiar with large scale purchasing and preparation of food.
  • Must be familiar with labor laws.
  • Must be familiar with accredited food service techniques.
  • Must be familiar with operation of all equipment.
  • Must be familiar with special diet requirements in a wide range of diseases.
  • Must have knowledge of mathematics and bookkeeping procedures to supervise inventory and prepare reports.
  • Must have keyboarding / computer skills.

Nice To Haves

  • Courses in foods and nutrition are desirable.
  • Courses in personnel management or supervisory training are desirable.
  • Registered and/or Licensed Dietitian is desirable.
  • Certified Dietary Manager is desirable.
  • Diet Tech with supervisory experience in food service is desirable.

Responsibilities

  • Oversees proper and safe functioning of the dietary department.
  • Functions as a teacher, training personnel to carry out all operations in accordance with required practices and nursing home standards.
  • Works harmoniously with other departments in the facility.
  • Sets specific goals for the Dietary Department.
  • Oversees all aspects of clinical responsibilities per P&P.
  • Responsible for or assigns responsibility for nutritional assessments, MDS RPOC, RAPS, Dietary Progress Notes, wound and weights meetings, and resident weight charts.
  • Completes initial assessments for tube-fed residents and monitors routinely for food preferences, complaints, texture modifications, and intake.
  • Oversees all aspects of assuring quality service within the dietary operation.
  • Completes QA forms, develops in-house QA monitors, and responds to resident council dietary requests.
  • Monitors the resident Dietary Food Questionnaire (D11) and attends Department Head Meetings.
  • Assumes responsibility for maintaining the department within budget parameters.
  • Orders all food and supplies, and keeps an ongoing tally of invoices.
  • Monitors job performance of all dietary employees.
  • Authorizes overtime and paid time off, and verifies time worked against payroll documentation.
  • Interviews new employees, checks references, completes paperwork, and assists with orientation.
  • Prepares work performance evaluations and recommends merit increases.
  • Responsible for adherence of dietary employees to all company rules and policies, and is authorized to administer discipline.
  • Reviews daily notes of absences and tardiness, and issues reprimands when appropriate.
  • Assures a monthly dietary in-service is conducted and keeps an up-to-date in-service log.
  • Attends White Oak Management, Inc. Dietary Manager Meetings and Food Shows as requested.
  • Communicates appropriate information to the Administrator and Corporate Consultant Dietitian.
  • Provides a monthly report concerning prior monthly activities.
