Prepares food in accordance with applicable federal, state, and local standards, guidelines, and regulations, with established policies and procedures. This role involves reviewing menus, preparing meals, working with dietitians, and ensuring food procedures are followed. Administrative tasks such as completing forms and reports are also part of the responsibilities. The position requires assisting in establishing food service production lines, processing diet changes, preparing appetizing and palatable meals, serving meals on time with portion control, and preparing food according to recipes, therapeutic diets, and special diet orders. Additionally, the cook ensures appropriate utensils are provided, prepares bedtime snacks and substitute foods, directs cleaning duties, assists with special meals and parties, and maintains adequate stock levels of food and supplies. The role also emphasizes treating residents with dignity and respect, promoting resident rights, establishing a culture of compliance, following safety and hygiene measures, maintaining confidentiality, reporting noncompliance and potential violations, protecting residents from abuse, reporting occupational exposures, participating in emergency drills, and reporting work-related injuries. The cook must also maintain food storage areas, ensure equipment and supplies are clean and safe, assist with inventory, and ensure food and supplies for the next meal are readily available. Recommending equipment and supply needs to the Director of Food Services is also a duty. The work environment is a ventilated, well-lit area with a warm atmosphere for cooking, subject to frequent interruptions and communication with medical and nursing staff. The cook may be exposed to heat/cold temperatures and may be subject to call-back during emergency conditions.
