About The Position

The Dietary Aide performs designated work and cleaning routines for the Dietary Department. This includes setting up tables and trays, serving and removing trays from the dining room, cleaning the dietary work area, and stocking and storing food, dishes, and supplies. The Dietary Aide is accountable to the Director of Dietary Services and, in their absence, to the Cook. The person in this position is responsible for carrying out assigned duties in accordance with current federal and state regulations and established company policies and procedures.

Requirements

  • Must be 18 years of age to operate a meat slicer and mixer.

Responsibilities

  • Serves meals to residents at meal times.
  • Assists in food preparation (e.g., peeling carrots, potatoes, making salad, desserts).
  • Portions and places food servings on plates and trays according to diet list on menu cards.
  • Inspects trays for completeness and conformity to prescribed card to ensure appropriate meals and snacks are given to residents, especially those with therapeutic diet plates.
  • Reads and follows tray cards and written diet orders accurately.
  • Meets scheduled meal and snack times.
  • Sets tables with utensils, glasses, napkins, and condiments.
  • Resets tables for the next meal.
  • Prepares milk, juice, coffee, tea, and water for residents at meal times.
  • Fills and turns on the steam table.
  • Collects and stacks dirty dishes on a cart and returns them to the kitchen.
  • Scrapes, washes, and racks dishes either for a dishwasher or manual cleaning.
  • Dries and puts away dishes, glasses, trays, utensils, pots, and pans, inspecting for damage such as chips and cracks, and de-staining dishes.
  • Operates kitchen equipment (dishwasher, garbage disposal, microwave, coffee maker, ice machine, blender, food processor, meat slicer, and mixer if 18 years of age) in a safe manner.
  • Cleans and sanitizes a variety of equipment and surfaces in the food preparation and service areas (e.g., fridge, freezer, stove, dishwasher, sinks, floors, spills, walls, storerooms, tables, cabinets, appliances).
  • Wears gloves or uses utensils to handle food.
  • Uses good hand washing techniques.
  • Collects and places garbage and trash in designated containers.
  • Maintains sanitation and safety standards, which involve established procedures (e.g., food handling, appropriate cleaning agents, water temperature, and frequency).
  • Follows cleaning schedules and performs cleaning duties as scheduled weekly, daily, monthly, and signs off when completed.
  • Follows Federal and State long-term care regulations and Dietary Department policies and procedures.
  • Moves deliveries of stock from storage to the kitchen area and puts them away.
  • Attends in-service educational programs.
  • Reports any unsafe or malfunctioning equipment.
  • Reports to the Nurse observations made during the course of one's regular duties of changes to residents' appearance, behavior, and mobility.
  • Performs related duties as assigned or as the situation dictates.
