The state supported living centers serve people with intellectual and developmental disabilities who are medically fragile or who have behavioral problems. The centers provide campus-based direct services and supports at 13 centers located throughout the state. Performs routine dietetic work for dietary and nutrition risk, providing intervention and monitoring of nutrition care activities. Assist in training Food Service Departments and other departments. Attends meetings as representative of Food/Nutrition Department. Responsible for Diet Audits. Works under minimal to moderate supervision, with limited latitude for the use of initiative and independent judgment.

Requirements

  • Graduation from an accredited high school or GED required.
  • Valid Texas driver’s license or ability to obtain it no later than 90 days after hire date, is required.
  • Applicants with an out-of-state driver’s license must provide an original certified driving record from the state of driving licensure.
  • Eligible driving record required based on HHSC Fleet Management policy.
  • Knowledge of nutrition, food service operations, diet therapy techniques and procedures.
  • Skill in listening, documenting and monitoring dietary/nutritional needs.
  • Ability to interpret medical record information/terminology
  • Communicate effectively with others and train others
  • Ability to monitor the effects of nutrition intervention
  • Skilled in basic computer usage for entering data.
  • Males between the ages of 18 – 25 must be registered with the Selective Service.
  • All applicants must be at least 18 years of age to be considered for employment at a state-operated facility.

Nice To Haves

  • Two (2) years’ work experience in food services is preferred.

Responsibilities

  • Attends work on a regular basis and may be required to work a specific shift schedule or, at times, even a rotating schedule, extended shift and/or overtime in accordance with agency leave policy and performs other duties as assigned.
  • Assisting in assessing nutritional needs of individuals.
  • Assisting in data collection.
  • Monitoring resident food and fluid intake.
  • Participation in ISP requirements.
  • Assisting in ISP meeting and implementation on nutrition plans adopted by Teams.
  • ISP meetings, Diet Sheet Management, SAP implementation Support, social classes, Exit and transition meetings
  • Monitoring dietary restrictions, preferences, and allergies.
  • In-services on dietary restrictions, preferences, and allergies.
  • Ensuring compliance with dietary guidelines and regulations.
  • Diet sheet management, Mealtime monitoring.
  • Maintaining documentation from kitchen and residential staff on mealtime concerns, quality improvement information and maintaining good working relationship.
  • Monitoring cleanliness of a workspace and proper use of utensils during food preparation and serving.
  • Monitors nutrition supplements including inventory control, and management of supplements to ensure efficiency and supply adequacy.
  • Collaborating with IDT on care plans.
  • Training kitchen and residential staff.
  • Kitchen staff In-services and audits on diet sheets and diets.
  • Keeping track of what has or hasn’t worked for a patient, which is crucial to providing adequate nutrition for critical cases, and audits on Mealtime procedures.
  • Related tasks as assigned.
  • May assist in clerical work as needed.
  • Other duties as assigned include but are not limited to actively participating and/or serving in a supporting role to meet the agency’s obligations for disaster response and/or recovery or Continuity of Operations (COOP) activation. Such participation may require an alternate shift pattern assignment and/or location.
