About The Position

The California Desert Studies Consortium, established in 1974, is an academic collaboration among seven California State University campuses. Its mission is to foster understanding and appreciation of the California deserts through a program that includes instruction, research, and special programs. The Consortium is seeking an exceptional individual to join its team as the Desert Studies Lead Cook (Cook II Lead). This role involves planning, organizing, and preparing meals for guests visiting the remote field station during the fall, winter, and spring seasons. Requirements

  • Equivalent to one year of experience performing the duties of Cook I – Lead or equivalent to two years of experience in a lead capacity over cooks and/or food service workers with the responsibility for planning and scheduling the preparation, cooking, and serving of meals for at least 250 persons a meal.
  • Working knowledge of kitchen sanitation and safety measures.
  • Working knowledge of food handling sanitation.
  • Working knowledge of principles, procedures, and equipment used in the storage, care, preparation, cooking, and dispensing of food in large quantity.
  • Working knowledge of methods and procedures used in the operations, cleaning and care of utensils, equipment and work areas.
  • Working knowledge of food values, and nutritional and economical substitutions within food groups.
  • Ability to plan menus.
  • Ability to lead and instruct others in appropriate methods of food handling and cleanup techniques.
  • Ability to communicate effectively.
  • Ability to solve work problems.
  • Ability to adjust priorities.
  • Ability to make necessary changes in duties and methods.
  • Ability to make sound decisions.
  • A valid California driver’s license.
  • Must pass a background check (including a criminal records check).

Responsibilities

  • Plans, organizes, and oversees the preparation, cooking, and dispensing of food.
  • Cleans and maintains culinary equipment, supplies, and work areas.
  • Purchases and monitors inventory of supplies.
  • Performs more complex tasks in purchasing, preparing, cooking, and serving a variety of food and beverage items.
  • Plans meals and travels long distances to purchase supplies within a budget.
  • Cleans and maintains culinary utensils, equipment, preparation and serving areas.
  • Maintains hygienic, safety, and sanitation standards.
  • Keeps records and submits receipts and invoices.
  • Inspects, stores, and inventories supplies.
  • Provides instruction and training to other employees and kitchen users.
  • Solves work problems.
  • Performs other duties as assigned.
