The Deputy General Manager is also responsible for hiring, training, developing, mentoring, supervising, counseling, scheduling, and terminating employees, as well as ensuring all required alcohol certifications and training are current. The position requires maintaining projection and sound technology, ensuring facilities are cleaned and maintained, and directing kitchen and bar maintenance and sanitation programs. Additionally, the role focuses on optimizing profits through strict cost controls, maintaining inventory controls for various supplies, ordering supplies based on demand, and creating staff schedules to meet demand while controlling labor costs. Guest satisfaction is paramount, involving prompt and appropriate action to resolve issues, managing guest relations, marketing, promotions, scheduling show times, and responding to guest complaints. The role also includes counting, depositing, and reconciling all receipts, and ensuring food and beverage items are prepared and served according to standards.
