The Deputy General Manager is also responsible for hiring, training, developing, and supervising staff, including kitchen and bar personnel, and ensuring all required certifications are current. They must maintain projection and sound technology, supervise theatre and kitchen maintenance, and optimize profits through strict cost controls and inventory management. Guest satisfaction, relations, marketing, and promotions are key aspects of this role, as is the accurate reconciliation of all receipts. The position requires a strong understanding of food preparation, safety standards, and maintaining a clean and hygienic environment. The Deputy General Manager must also ensure compliance with all federal and state laws regarding breaks and meal periods.
