The Custom Meat Cutter is responsible for preparing high quality cuts of meat according to customer specifications, adhering to company standards and all safety requirements, and maintaining yield and time benchmarks. This role involves trimming and customizing portions of meat products using various equipment, counting and stacking portions, labeling products, and setting up the cutting room. The incumbent must ensure cutting rooms and surrounding areas are clean and sanitized, follow company GMP (Good Manufacturing Practices) to maintain sanitary conditions, and work continually in a refrigerated environment (35°F- 45°F). The position may require overtime without notice, as the finish time is dependent on work completion.
