About The Position

Reports to Culinary Management for 310 Provisions at Intuit Dome. Maintains 310 Provisions sushi standards and specifications related to food preparation and food handling on a daily basis, understands measurements requirements. Prep is being done in a timely manner. Overseas and helps teach sushi preps needed skills. Coordinates sushi drops around dome and double checks incoming orders to check quality and record fish data. Helps make sushi when running behind schedule or need something completed within a specific time frame. Cut/fish and veg, makes nigiri, slice sashimi, roll sushi, and make handrolls. Has extensive knowledge of the following: vegetables, preparing sushi rice, fish species, how to breakdown and portion fish, how to store and handle all seafood, and assist the Executive Sous Chef of sushi. Knowledge of all kitchen and sushi equipment, including adjusting thermostat controls to regulate temperature of ovens, broilers, grills, steam kettles, rice cookers, and maki machine. Ability to inventory product, read menus (BEOs, Restaurant Orders) and estimate food requirements to create a production plan. Maintains Intuit sushi standards and specifications related to food preparation and food handling on a daily basis, understands measurements requirements. Knowledge and understanding of food safety and sanitation guidelines including temperature requirements and HACCP (Hazard Analysis and Critical Control Points) while understanding the science in cooking temperatures. Responsible for checking and maintaining proper temperatures throughout preparation, cooling, holding and serving of food items including adjusting thermostat controls to regulate temperatures. Observes and tests food being cooked/ prepared by tasting, smelling and piercing with cooking utensil to determine that food is cooked/ prepared properly, according to specifications. Cleans kitchen equipment. Ability to handle special dietary requests for catering and premium guests/ events. Creates seasonings, cures and rubs. Must demonstrate advanced culinary technical skills required in food preparation and use of kitchen equipment. Must demonstrate ability to present and discuss menu item preparation with Cook 1, Cook 2, Prep Cooks, Front of House team, leadership, and Guests.

Requirements

  • Minimum 2 years experience in culinary field with a focus on high volume production
  • Culinary Education Degree or equivalent experience required with less than 2 years experience
  • Must be at least 18 years of age to be considered for this role
  • Proficient knife skills
  • Basic knowledge of technology
  • Proven knowledge of culinary and sushi techniques and terminology
  • Proven ability to read and understand recipes
  • Organizational skills; Ability to multi task and work in a very fast paced team environment
  • Speed, accuracy and efficiency are required and ability to work well under pressure
  • Ability to adapt to production requirements
