About The Position

The Culinary Services Manager is responsible for planning, directing, controlling, communicating, and coaching within the dining service department. This role involves managing the Culinary Services Department, implementing a menu program that meets nutritional requirements (including special diets) and resident preferences to ensure high satisfaction. The manager will oversee resources and budget for purchasing decisions, maintain accurate accounting records, and develop cost-effective procurement systems. Additionally, the position ensures food is prepared to resident satisfaction and in accordance with safe food handling practices, develops and implements procedures for food storage and preparation, and ensures equipment meets health department standards. The manager will also lead and coach team members, foster positive resident experiences, and make recommendations regarding hiring, firing, and staff performance to the Executive Director. Training new and existing staff on policies, procedures, and guidelines is a key responsibility, as is maintaining a clean kitchen, developing work schedules, ordering food and supplies, and monitoring inventory. The role also establishes quality standards for food presentation, service, receiving, storing, and inventorying. Finally, the manager is expected to foster teamwork, assist co-workers, act with integrity, and perform other duties as assigned.

Requirements

  • Management experience in a dining service or culinary role.
  • Knowledge of nutritional requirements, including special diets.
  • Understanding of safe food handling practices and sanitation standards.
  • Experience with budget management and purchasing.
  • Ability to train and coach staff.
  • Strong communication and interpersonal skills.

Responsibilities

  • Planning, directing, controlling, communicating, and coaching in the dining service department.
  • Managing and directing the Culinary Services Department.
  • Implementing a menu program that meets nutritional requirements, including special diets, for residents.
  • Assessing and responding to resident preferences to achieve a high level of resident satisfaction.
  • Managing resources and budget for purchasing decisions for the Department.
  • Maintaining accurate accounting records for all receipts and expenses of the Department.
  • Developing purchasing guidelines and implementing a cost-effective food and supply procurement system.
  • Ensuring all foods are prepared to the satisfaction of residents and in accordance with safe food handling practices.
  • Developing and implementing procedures to ensure food is stored and prepared in accordance with safe food handling and safety standards, including maintaining food temperatures and time controls.
  • Ensuring all equipment used meets all health department standards.
  • Managing and coaching team members to provide high-quality service to residents and maintain positive resident experiences during mealtimes.
  • Circulating through the dining room and speaking with residents to ascertain resident preferences and satisfaction with meals and food quality.
  • Making recommendations to the Executive Director on hiring, firing, promotion, demotion, and discipline for all team members in the culinary department.
  • Providing information to the Executive Director regarding individual staff performance for purposes of evaluations.
  • Helping establish job performance standards to guide performance improvement.
  • Training new staff in the Culinary Services Department regarding policies and procedures, nutritional requirements, resident satisfaction, dietary guidelines, sanitation guidelines, and flow of work.
  • Conducting periodic continued and additional training regarding dietary and sanitation guidelines with existing staff.
  • Ensuring and helping maintain a clean kitchen.
  • Developing and assigning work schedules for culinary staff.
  • Leading and conducting regular meetings with all culinary team regarding meal planning, resident satisfaction, safety standards and guidelines.
  • Ordering all food and supplies.
  • Maintaining and monitoring food services inventory.
  • Establishing quality standards for the presentation and service of food by the Culinary Services Department.
  • Establishing standards for receiving, storing, and inventorying food and supplies, including comparing the order to what is received and for quality assurance of all incoming product.
  • Fostering teamwork with co-workers, taking actions which assist others beyond job responsibilities, treating others with respect, working with integrity and ethically, and having a positive impact on co-workers, residents, and visitors.
  • Performing other duties as assigned or needed.
