This position is the lead level in the series and applies food service principles, practices, and methods governing food preparation activities. This includes food handling, proper storage, temperature control, and cleaning of kitchen equipment and utensils to comply with safety and sanitary standards. The role involves instructing inmate/youth food service workers in the operation of various commercial kitchen equipment and in food preparation, cooking, and safe food and storage handling. The specialist supervises inmates/youths in their kitchen assignments, directing their activities and establishing a positive working relationship. They maintain control of kitchen utensils, tools, and equipment, and enforce rules, regulations, policies, and procedures of the institution and department to maintain discipline, order, security, and housekeeping. Personal hygiene rules for inmate/youth food service workers are also enforced to maintain sanitary standards. The role requires preparing various reports and maintaining accurate records, as well as attending Department-approved training courses.
