The successful candidate may be based in New York City, Chicago, or Detroit and will travel regularly to support DO & CO facilities across the United States. Position Overview The Corporate Sanitation & Food Safety Specialist is a technical subject-matter expert responsible for advancing and standardizing sanitation and food-safety programs across DO & CO's U.S. operations. This role partners with FSQA, Operations, Sanitation, Maintenance, Engineering, and facility leadership to identify risks, strengthen preventive controls, improve environmental monitoring, and ensure compliance with regulatory, customer, and company standards.

Requirements

  • Bachelor's degree in Food Science, Microbiology, Food Safety, Biology, Environmental Health, Public Health, Food Engineering, or a closely related discipline is required.
  • Current Preventive Controls Qualified Individual (PCQI) certification is required.
  • Current HACCP certification is required.
  • Minimum of five years of progressive experience in food manufacturing, airline catering, commissary operations, sanitation, food safety, or quality assurance.
  • Experience in FDA-regulated food facilities and knowledge of 21 CFR Part 117.
  • Demonstrated experience with Listeria investigations, environmental monitoring, microbiology testing, sampling, trend analysis, and corrective-action verification.
  • Strong working knowledge of food sanitation, GMPs, HACCP, preventive controls, Environmental Monitoring Programs, SSOPs, ATP systems, allergen controls, and microbiological verification.
  • Demonstrated ability to conduct sanitation inspections, identify microbiological and hygienic-design risks, lead root-cause investigations, and verify sustained corrective and preventive actions.
  • Strong analytical, organizational, written, verbal, training, and cross-functional influencing skills.
  • Ability to work independently and manage priorities across multiple facilities.
  • Willingness and ability to travel regularly among U.S. facilities.
  • Flexibility to work early mornings, nights, weekends, holidays, and overnight sanitation or pre-operational activities when required.
  • Ability to work for extended periods on foot and in environments with varying temperatures.

Nice To Haves

  • Registered Sanitarian (RS), Registered Environmental Health Specialist (REHS), or an equivalent credential.
  • Experience in ready-to-eat food manufacturing, airline catering, commissary, or high-volume food-production environments.
  • Experience with sanitation chemicals, allergen cleaning validation, ATP systems, hygienic design, and regulatory or customer audits.

Responsibilities

  • Provide technical oversight and guidance for sanitation and food-safety programs across U.S. facilities.
  • Develop, review, standardize, and continuously improve Sanitation Standard Operating Procedures (SSOPs), Master Sanitation Schedules, cleaning procedures, and sanitation verification standards.
  • Conduct comprehensive sanitation and pre-operational inspections of production and ready-to-eat areas, coolers, freezers, dish rooms, equipment, drains, floors, walls, ceilings, docks, waste areas, and other food-production environments.
  • Evaluate cleaning methods, frequencies, chemicals, concentrations, contact times, tools, equipment, sequencing, and sanitation practices; verify that corrective actions are completed before areas or equipment are released for production.
  • Lead and continuously improve Environmental Monitoring Programs, including sampling plans, zoning, site selection, testing frequencies, data review, and trend analysis.
  • Support investigations involving presumptive or confirmed Listeria species, Listeria monocytogenes, and other microbiological findings; lead root-cause analysis, intensified cleaning, resampling, corrective action, and effectiveness verification.
  • Establish consistent expectations for ATP monitoring, allergen residue testing, microbiological testing, sanitation validation, and routine verification; analyze trends and recurring failures.
  • Review sanitation chemicals and verify proper concentration, labeling, storage, dispensing, employee use, and compliance with manufacturer instructions and approved applications.
  • Identify hygienic-design and infrastructure risks, including harborage points, standing water, condensation, damaged surfaces, deteriorated seals, inaccessible areas, and difficult-to-clean equipment.
  • Partner with Maintenance, Engineering, Operations, chemical suppliers, sanitation contractors, and facility leadership to develop and sustain practical corrective and preventive actions.
  • Review pest-control, waste-handling, dock, compactor, recycling, and exterior-area programs for sanitation, structural, and pest risks.
  • Develop and deliver technical training on SSOPs, GMPs, HACCP, hygienic practices, chemical safety, cross-contamination prevention, environmental pathogen control, and corrective-action requirements.
  • Support FDA inspections, customer audits, third-party audits, and internal assessments; assist facilities with responses, corrective action plans, and follow-up verification.
  • Support allergen, Halal segregation, shared-equipment, and cross-contact controls through effective sanitation procedures and verification.
  • Analyze multi-site sanitation and microbiological data, identify systemic risks, report trends to FSQA leadership, and drive continuous improvement.
