The Cook prepares meals according to approved menus and recipes, taking into account the special dietary needs of residents living in the community. In the absence of the Dining Services Director, the cook supervises dietary staff to ensure efficient operation of the kitchen at all times. The role involves preparing and presenting menu items according to standard recipes, maintaining a clean and orderly work area, and reporting any equipment malfunctions or incorrect temperatures. The cook is responsible for proper food cooling, storage, identification, and dating, as well as monitoring portion sizes to minimize waste. Menu substitutions may be made with approval. The cook is responsible for ensuring the kitchen is ready for meal service and clean for the next day's operation, especially during evening shifts. They must take and record food temperatures three times daily, attend required meetings, and become familiar with resident-specific requests and diets, noting changes in dietary needs, likes, and dislikes. Maintaining courtesy and politeness towards residents, visitors, and staff, and following confidentiality policies are essential. The cook also supervises dietary staff in the absence of the Dining Services Director and Supervisor, assists in training new employees, and conducts training sessions as directed.
