About The Position

This role involves representing Compass Group Canada in a professional manner, performing various kitchen tasks including pre-preparation, preparation, and station-specific duties. The Cook Supervisor is responsible for ensuring food quality, adhering to safety and sanitation standards (HACCP/QA), managing inventory, and maintaining cleanliness. The position requires physical stamina, the ability to work under pressure, and strong organizational skills. Additionally, the role involves customer interaction to ensure satisfaction and maintaining various HSQA records.

Responsibilities

  • Represent Compass Group Canada in a courteous, efficient, and friendly manner.
  • Perform pre-preparation and preparation tasks as assigned by the Executive Chef.
  • Handle tasks in other areas of the kitchen in addition to their assigned stations.
  • Be responsible for opening and closing checklists, as well as necessary reports.
  • Adhere to menu specifications and standardized recipes.
  • Ensure all food served meets quality standards, proper temperature, and correct timing.
  • Ensure all HACCP/QA standards for food preparation are followed.
  • Perform cleaning duties and responsible for the cleaning of own station.
  • Ensure sufficient stock has been prepared for service.
  • Receive and put away deliveries following SOP for receiving.
  • Weigh all waste at the end of each shift and follow proper diversion or waste management protocols.
  • Maintain good portion control and forecast of production as directed by the Executive Chef.
  • Maintain proper food production records.
  • Maintain established food rotations in all areas to minimize spoilage and waste.
  • Report damaged and/or inoperable equipment and fixtures to the unit manager.
  • Perform other work-related duties as assigned by management.
  • Assist anywhere else in the kitchen during production as needed.
  • Interact with customers to assure customer satisfaction.
  • Maintain all HSQA records, such as production logs, hot and cold temp logs, cooling logs, receiving logs, and cleaning logs daily.
  • Follow principles of sanitation and safety in handling food and equipment.
  • Maintain all related work areas and equipment in a clean and sanitary condition.
  • Be responsible for the cleaning and sanitizing of the assigned station before, during, and after service.
  • Ensure Standard Operating Procedures and guidelines are followed at each station during their shift.
  • Ensure Compass Group Canada Quality Assurance Policies and procedures, and Public Health Policies on food handling, cleaning and sanitation are followed at all times.
  • Attend weekly safety talk meetings.
  • Complete the weekly cleaning checklist.
  • Complete weekly station inventory.
  • Complete all required 24/7 training.
  • Attend monthly marketing and culinary meetings as applicable.
