Cook II are responsible for preparing recipes and food items for service in their respective kitchen. This role involves fast and sanitary preparation of all menu items following established recipes and standards, rotating between all cooking stations, and ensuring each order is uniform and consistent. The Cook II controls food production, ensuring proper cooking methods, time, and temperature, as well as sanitation, handling, and storage of prepared food and leftovers. Proficiency is required in various areas including hot prep, cold prep, salads, desserts, dressings, garnishing, sauces, soups, and knife skills. The role also involves maintaining par levels, ensuring station cleanliness, and operating a cash register for customer check settlement. Additionally, the Cook II must meet attendance guidelines, prepare for rush periods, and may assist in other kitchen areas or perform lead cook functions for advancement. Recommendations for food substitutions and menu adjustments may be made. The role also includes greeting guests, maintaining a clean work area, and demonstrating excellent customer service.
