The Cook I is responsible for setting up and breaking down stations, preparing food in assigned areas, ensuring the highest standards of food quality and service, and preparing daily and nightly prep lists for the following day. This role involves checking the quality of meats, seafood, produce, and grocery supplies, and collaborating with other cooks and Sous Chefs. The Cook I must keep their supervisor informed of any issues, follow safe kitchen practices, participate in required training, and submit reports promptly. Responsibilities include monitoring food quality and presentation, managing the quality and quantity of received produce, maintaining a clean and organized kitchen, practicing FIFO storage, adhering to Department of Health practices, updating temperature logs, using appropriate cutting boards, and informing chefs of special product needs for functions. The role also requires following SOPs, understanding and applying local health department sanitation laws, assessing food portion size and visual appeal, communicating with chefs to reduce food waste, operating kitchen equipment, preparing food according to recipes and serving it appropriately, and assisting in creating seasonal menu items. Additionally, the Cook I must properly label, date, and store mise en place, assist in station inspections, help onboard new employees, ensure side work completion, conduct daily food inventory for accurate ordering, write accurate prep lists, work all kitchen stations, assist with expediting meal service, hold team members accountable, create specials to eliminate food waste, conduct pre-shift meetings, execute luxury hotel standards, and comply with special guest requests. Other duties as assigned.
