About The Position

The Chief Steward is responsible for leading, scheduling, coaching, and developing the Stewarding team. This role involves hiring, training, and mentoring team members while promoting accountability and teamwork. The Chief Steward will manage labor, daily assignments, and staffing based on business needs, ensuring exceptional cleanliness and organization across all kitchens, stewarding areas, storage rooms, receiving dock, and back-of-house spaces. They will oversee all dishwashing, pot washing, and sanitation operations, ensuring all warewashing and equipment are cleaned, organized, properly stored, and readily available for service. Additionally, the Chief Steward will ensure compliance with food safety standards, manage waste and sustainability initiatives, and provide stewarding support for various events and operations.

Requirements

  • High School Diploma or GED
  • Minimum 3 years of stewarding experience in a hotel, resort, or high-volume restaurant
  • Minimum 1 year of supervisory or management experience
  • Knowledge of food safety and sanitation standards
  • Experience leading diverse teams
  • Strong communication skills
  • Excellent organization and time management
  • Ability to prioritize multiple projects
  • Computer proficiency (Word, Excel, Outlook)

Responsibilities

  • Lead, schedule, coach, and develop the Stewarding team.
  • Hire, train, and mentor team members while promoting accountability and teamwork.
  • Manage labor, daily assignments, and staffing based on business needs.
  • Maintain exceptional cleanliness and organization across all kitchens, stewarding areas, storage rooms, receiving dock, and back-of-house spaces.
  • Ensure all areas remain inspection-ready and meet Marriott, Columbia Hospitality, and Washington State health standards.
  • Oversee all dishwashing, pot washing, and sanitation operations.
  • Ensure all china, glassware, silverware, cookware, banquet equipment, and smallwares are cleaned, organized, properly stored, and readily available for service.
  • Monitor inventory, breakage, and replacement needs.
  • Ensure compliance with HACCP, OSHA, Washington State Food Code, Marriott brand standards, and Columbia Hospitality policies.
  • Maintain chemical safety, SDS documentation, sanitation schedules, temperature logs, and proper PPE usage.
  • Partner with Engineering to maintain dish machines, hood systems, ice machines, floor drains, and other stewarding equipment.
  • Report equipment issues promptly and maintain a safe working environment.
  • Manage trash, recycling, compost, grease disposal, and loading dock cleanliness while supporting the hotel's sustainability initiatives.
  • Provide stewarding support for restaurants, banquets, weddings, conferences, and special events.
  • Coordinate equipment setup, breakdown, and staffing to ensure seamless execution of all Food & Beverage operations.
  • Washes china, glass, flatware, pots, pans, and cooking utensils.
  • Maintains the cleanliness and organization in the kitchen and of the cleaning supplies.
  • Remove trash, compost, and recycle to appropriate receptacles.
