About The Position

Meriwether Godsey is looking for a Chef Manager at our Sweet Briar College location. This position is responsible for the food production of the dining program, which operates seven days a week, as well as helping with special events. Our ideal candidate has strong culinary and kitchen management skills, promotes diversity, has a vision for excellence, is a creative problem-solver, and has a passion for food.

Requirements

  • A culinary degree (preferred) and 3+ years of Kitchen Management experience (required)
  • ANSI Food Protection Manager and Allergen Certified, or ability to attain once hired.
  • Exceptional cooking skills; experience with high-volume food service operations as well as batch cooking for consistent freshness.
  • Arithmetic; ability to measure products and convert units of measure.
  • Proficient in the use of commercial kitchen equipment, including routine maintenance and cleaning.
  • Computer skills to be applied to proprietary software as well as Google Suite.
  • Participative management style and servant leadership skills.
  • Attention to detail, management, and organizational skills; teamwork-oriented.

Responsibilities

  • Assist the Executive Chef with all aspects of production and work collaboratively alongside production staff to incorporate key ingredients/products into recipes and menu offerings daily.
  • Participate in the preparation, cooking, and portioning of large quantities of meals and other items; determine how food should be presented and create decorative food displays.
  • Ensure the quality and timeliness of food production, using batch cooking methods to maintain the quality and freshness of the product.
  • Assist the Director of Dining Services with ordering food/supplies and receiving and checking products for freshness and quality.
  • Assist with monitoring and recording kitchen inventory and production data; drive sustainability programs to improve waste reduction.
  • Assist the Director of Dining Services with day-to-day support, training, and staff guidance to ensure that food quality standards, food safety, and sanitation guidelines are met.
  • Ensure correct use of equipment, perform preventive maintenance, and schedule equipment maintenance.
  • Inspect supplies, equipment, or work areas to ensure conformance to established standards.
  • Keep food production areas, kitchen equipment, and storage areas clean, organized, and sanitized; participate in and assist with coordinating the cleaning of cooking areas and equipment.
  • Assist with and attend daily pre-production and service meetings; offer input regarding leftover utilization, efficiency, product quality, etc.
  • Foster an inclusive environment for all staff and guests, while maintaining effective client and customer-centric relationships.
  • Perform all duties in accordance with food safety and sanitation best practices.
