About The Position

Four Seasons Private Residences Los Angeles is seeking a Chef de Cuisine to lead its culinary team. This role will oversee a full-service private dining lounge, in-condo dining, and to-go options exclusively for residents and their guests. The lounge operates five days a week, offering organically sourced and elegantly prepared cuisines with menus frequently crafted to accommodate resident requests and dietary needs. The Chef de Cuisine will be responsible for menu planning, meal preparation, cooking, staff development, hiring, and managing the food and beverage program. The culinary team will also cater events for residents and staff. This is a working chef's position offering creativity, agency, and growth opportunities within the Four Seasons global network.

Requirements

  • Reading, writing, and oral proficiency in the English language.
  • Extensive coursework or experience in kitchen administration and management.
  • 5-7 years’ experience in a kitchen environment with comprehensive knowledge of all aspects of cooking.
  • A high level of creativity and a commitment to high quality standards.
  • A mentor, coach, and servant leadership mindset.

Nice To Haves

  • Spanish language proficiency.
  • Experience with Micros, and Birch Street, or similar software.

Responsibilities

  • Ensure the correct preparation and presentation of all food items for dine-in, in-condo, and pool-side dining.
  • Plan and develop menus considering product availability, service cost, marketing conditions, seasonality, and number of guests.
  • Establish and maintain appropriate food portions and pricing to meet the Private Residence's guidance and achieve net profit.
  • Prepare and post employee work schedules based on operating forecasts and budget.
  • Prepare a weekly payroll report.
  • Supervise all methods of food preparation, cooking, portion control, garnishing, and presentation.
  • Coordinate and supervise food supply ordering, maintain cost accounts, and manage food preparation areas.
  • Hire, train, discipline, supervise, and organize culinary and lounge personnel.
  • Complete performance evaluations for all employees and make recommendations for salary increases.
  • Maintain high employee morale and motivation.
  • Coordinate with other departments for special functions regarding food preparation, presentation, costs, and staffing.
  • Ensure compliance with sanitation standards and maintain cleanliness of the kitchen and food preparation equipment.
  • Develop and ensure a safe working environment.
  • Set up control systems for quality and portion consistency.
  • Create proper purchasing specifications.
  • Monitor operating criteria, food preparation, quality, and presentation, making recommendations for improvements.
  • Communicate regularly with the Director of Residences regarding kitchen activities and results.
  • Monitor the employee cafeteria and pantry for quality and variety.
  • Respond appropriately to building emergencies and safety situations.
  • Perform other assigned tasks or projects.
  • Set up specialty menus for private catering and events.
  • Provide daily supervision and management of all department staff, including servers, stewards, cooks, and cleaning personnel.
  • Participate in leadership meetings.
  • Develop the annual budget.
  • Adjust forecasts and daily cover counts.
