The Chef De Cuisine is responsible for the selection, training, and performance management of the Culinary Team, overseeing the daily activities of the kitchen. This role works closely with the Food and Beverage Manager on special and catered events, attending meetings to discuss upcoming events and review contracts. The Chef De Cuisine facilitates monthly department meetings, manages division activities through the Food and Beverage Team to ensure guest expectations are exceeded, and maintains efficient operations while adhering to established safety and quality standards. This position ensures a safe work environment, develops all menus with Food and Beverage Manager approval, and supports catering and event planning. The Chef De Cuisine maintains ongoing communication with all departments, responds to inquiries and complaints, protects company assets, audits kitchen payroll, and completes monthly food inventories.
