About The Position

A large-scale casino and resort with multiple on-site dining concepts is seeking a Chef de Cuisine to join their team. This role requires experience in fast-paced, high-volume kitchen environments, with a proven ability to lead and develop large teams. The position will oversee an Asian fusion concept, so experience in similar cuisine and restaurant styles is essential.

Requirements

  • Experience in fast-paced, high-volume kitchen environments.
  • Proven ability to lead and develop large teams.
  • Experience in Asian fusion cuisine and restaurant styles.
  • Knowledge of health/safety (OSHA) standards.
  • Ability to control food and labor costs.
  • Ability to manage inventory, minimize waste, and order supplies.

Responsibilities

  • Develop, test, and implement menus, ensuring consistent quality, flavor, and presentation for various restaurant concepts within the casino.
  • Recruit, train, schedule, and mentor kitchen staff (chefs, cooks, assistants).
  • Manage daily kitchen activities, including food prep, service, and ensuring cleanliness and adherence to health/safety (OSHA) standards.
  • Control food and labor costs, manage inventory, minimize waste, and order supplies to meet budget targets.
  • Work to achieve excellent guest experiences through high-quality food and service, embodying brand standards.
