The Chef de Cuisine/Executive Chef will uphold Discovery Land Company’s commitment to superior food and beverage and hospitality. This role involves working with culinary leadership to create exemplary culinary standards and an environment of continual improvement. The Chef will lead and collaborate with the culinary team to create menus and food presentations of the highest level, encompassing conceptual direction, sense of place, and the freshest ingredients possible. This position also oversees the Culinary staffing program through recruitment, training, and evaluation of each culinary employee, encouraging ongoing staff development, fostering a cooperative working climate, and maximizing productivity and employee morale. The Chef will set the tempo and tone of the kitchen, anticipate business levels and special events, and create and foster relationships with local sources of culinary product, artisans, and farmers to incorporate local influences into dishes. Responsibilities include supervising daily procurement and receiving procedures, daily inventory, rotation, and collaboration with the team to ensure the use of fresh product. The role ensures continual product quality control and procedures are maintained daily in all areas for consistency, while minimizing spoilage, waste, and overproduction. The Chef will regularly review house counts, forecasts, and VIP lists, communicating this information via daily line-ups and pre-shifts. Addressing and resolving member or guest problems efficiently and effectively is crucial. Daily spot checks for menu accuracy and taste in all areas, ensuring all menu items are costed correctly and prices updated regularly, and creating and managing a recipe database for consistency are key duties. The Chef will work with the stewarding department to manage equipment inventory, ensure effective storage, usage, cleaning, and repair, and minimize equipment breakage. Ensuring all cleaning schedules, temperature records, and opening/closing checklists are completed and recorded daily is required. Maintaining open and active communication with other departments, conducting and attending meetings as necessary, and generating reports are also part of the role. The Chef must maintain a clean and safe working environment, follow all safety and security regulations, and train the culinary department accordingly. Other responsibilities may be assigned.
