The Chef Assistant is responsible for monitoring general department operations, establishing work reschedules, issuing daily work assignments, and responding to requests for service. This role acts as a resource to employees, providing training, day-to-day work direction, and input on performance. The Chef Assistant will assign, monitor, and review the progress and accuracy of work, direct efforts, and provide guidance on more complex issues. They will ensure employees understand food portioning, pre-serving/serving activities, recipe standardization, infection control, fire safety, and cleanup activities consistent with Hazard Analysis and Critical Control Point (HACCP) Guidelines. The position also involves preparing general and special diet items in accordance with standardized recipes, deciding on ingredient substitutions or garnishes based on diet requirements, and ensuring all food on the cycle menu master is completed on time, in the correct quantity, and of optimum quality. The Chef Assistant will estimate food requirements, control serving portions, eliminate waste and leftovers, and review weekly food usage and complete weekly inventory. Additionally, they will assist in planning weekly retail specials and menus, theme meals, induction cooking, and display cooking standards, and prepare catered and specialized events. The role includes completing daily production forecasting sheets, verifying numbers with cooks, completing daily Foodborne Illness Checklists, noting and trending deficiencies, and reviewing and resolving problems. A weekly sanitation checklist with an appropriate action plan for the production area is also required. The incumbent must demonstrate knowledge and skills necessary to provide care appropriate to the age of the patients served, understanding the principles of growth and development over the life span and assessing data reflective of the patient's status to identify age-specific needs.
