This position relieves Phase 1 Cookers (2 shifts per week), Break Relief (1 shift per week) and Belts (2 shifts per week) for the regular operators days off. This position requires mechanical abilities and an understanding of cheese making equipment. Effectively monitor cheese making equipment including but not limited to; Pasteurizers, DOH vats, cooker/stretchers, rotary molder/chillers (RMCs), cheese belts, analyzing equipment, clarifiers, silos, finesavers and cleaning equipment. Communicate with down stream operators to ensure accurate identification of individual vats & recipes. Record & interpret data to make informed decisions and / or recommendations for optimum cheese making conditions.
