Requirements

Must read, write, and understand verbal instructions
Must complete a sanitation course either before or during first year
Must be knowledgeable in operating an efficient cost-effective program.
Ability to perform basic arithmetic
Maintain emotional control under stress
Ability to resolve interpersonal situations
Strong organizational skills

Responsibilities

Oversee the kitchen in the chef’s absence
Maintain proper order in the kitchen
Wear Proper uniform
Complete daily HACCP logs and file accordingly
Assist Chef with monthly inventory
Coach employees on proper cooking methods
Advise chef of issues in the kitchen. Sanitation, staffing, personal.
Proper organization of all walk-in’s and dry storage areas. FIFO Method and proper storage of Raw and cooked foods
Assist in the ordering process.
Prepare and cook products
Monitor food quality and portion control
Proper care and handling of equipment and utensils
Follow recipe guidelines
Adhere to sanitation and cleanliness standards.
Follow opening and closing procedures
Comply with company policies
Cooking on the hot line
Prep production in his area
Helping in other areas of the kitchen
Sanitation
Miscellaneous duties as assigned by supervisor.
