About The Position

Enchantment is seeking an outgoing, energetic, passionate, and authentic Cafeteria Cook to join their team. This role is responsible for specific aspects of food handling and preparation, overseeing the cafeteria/employee dining room operations. The ideal candidate will adhere to sanitation practices, manage the day-to-day operations of the cafeteria/employee dining room, and assist with banquet needs. Strong interpersonal skills, self-motivation, and discipline are essential for working effectively within a team and with minimal supervision.

Requirements

  • High school or equivalent education required.
  • Minimum of two years experience in a similar capacity in a full-service fine dining restaurant or four-star or higher hotel/resort.
  • Good leadership skills and abilities.
  • Ability to explain and demonstrate essential functions with or without reasonable accommodation.
  • Must be able to speak, read, write, and understand the primary language(s) used in the workplace.
  • Must be able to read and write to facilitate communication.
  • Requires great communication skills, both verbal and written.
  • Use of Resort-approved communication devices (radio, pager, earpiece, etc.).
  • Ability to read recipes and follow instructions.
  • Must have the ability to delegate tasks if necessary based on the level of business.
  • Basic math computational capability including addition, subtraction, multiplication, and division.
  • Ability to work under little or no direct supervision and be accountable for subordinate cooks.
  • Ability to deal with problems and resolve them efficiently.
  • Ability to multi-task in a fast-paced and hot environment.
  • Maintain current food handler's certification.

Responsibilities

  • Cooking processes, organization, and cleanliness of assigned working station.
  • Organization and preparation of menu items for timely opening.
  • Entire set-up and mise en place for assigned station.
  • Ensuring the freshness and quality of all food products.
  • Cooking menu items with speed, efficiency, and accuracy.
  • Proficiency in assigned station, cafeteria menu, and banquet environment, with availability to work any station as business levels require.
  • Maintaining freshness and quality of all food products in the cafeteria, including proper rotation of items.
  • Knowledge of degrees of doneness for meats.
  • Expediting cafeteria opening hours as needed for smooth operation.
  • Maintaining quality throughout the entire opening of the cafeteria.
  • Checking final product from station before delivery to ensure proper preparation, presentation, and seasoning.
  • Maintaining a neat, safe, and clean workstation using proper handling and storage procedures.
  • Monitoring sanitation practices to ensure standards and regulations are followed.
  • Assisting in banquet preparation and pickups when requested.
  • Producing the finest quality product on a consistent basis.
  • Knowing the cafeteria menu and banquet menu and its ingredients perfectly.
  • Reporting any unsafe working/food safety conditions to Culinary Management and Engineering.
  • Inspecting refrigerators and freezers daily for Food Safety and health department standards (expired product, time-temperature abuse, improper labeling/dating/wrapping).
  • Attending mandatory culinary meetings for communication between management and employees.
  • Communicating potential problems or concerns to lead cook or supervisor for timely rectification.
  • Communicating with co-workers and lead cooks on each shift about any problems or concerns.
  • Providing training, expectations, and ongoing support and assistance for new hires.
