About The Position

The Back of House (BOH) Lead is a career-driven and creative culinary professional with strong leadership qualities and the ability to support the management of kitchen operations independently at the assigned F&B concept. This individual is hands-on, organized, and thrives in a fast-paced environment while maintaining high standards of food quality, presentation, and cleanliness. The ideal candidate is either a graduate of a two-year accredited culinary program with relevant experience or has a minimum of three years in high-quality kitchen environments. As a key member of the Food & Beverage team, the BOH lead mentors line staff, and contributes to a positive and professional kitchen culture. This position is a seasonal position and may have fluctuations in hours worked based upon overall business volumes.

  • Serve Safe Certified.

Responsibilities

  • Demonstrated proficiency with proper culinary tools.
  • Maintains temperature logs, dating & EOM Inventory process.
  • Has the ability to be responsible for a single outlet of a Eldora’s food & beverage operation.
  • Follow prep sheets accurately and with a sense of urgency.
  • Prepares food to the specifications of the BOH Manager.
  • Reads, understands, and follows recipes and standards.
  • Takes responsibility for the product used in their outlet and manages it to assure a quality product.
  • Responsible for and supervises team members regarding food handling, including rotation, sanitation of all storage areas, labeling and dating, and ensures all storage areas are maintained.
  • Advises upper management of anticipated problems.
  • Assists the BOH Manager in the menu development process, ordering food, the creation, usage, and follow-through of prep lists, cleaning lists, and closing lists, & the direction and supervision of staff.
  • Sets the example by following all company safety policies and procedures, actively contributing to a safe working environment for self, coworkers, and guests.
  • All employees are expected to support Eldora’s corporate responsibility commitment to protect the environment by participating in our Sustainable Transportation Program. This includes choosing alternative transportation, carpooling, using the employee shuttle, and avoiding onsite parking on weekends and peak days. These actions help reduce Scope 3 emissions, lead by example, and ensure adequate parking for our guests.
  • Must be able to work weekends and holidays as required by resort operations.
