About The Position

This position at JBS USA involves performing precision knife cuts on the harvest floor. The role requires making critical decisions related to pathology, product presentation, and sanitary dressing standards. The Beef Modernization Sorter will observe and identify anatomical, physiological, and pathological indicators to ensure the highest levels of food safety and product quality. The job demands maintaining speed and accuracy in a high-paced production setting and collaborating with the Sorter Supervisor, USDA-FSIS Consumer Safety Inspectors, and other Harvest floor departments to support regulatory compliance and process flow. The role also includes participating in ongoing training and demonstrating consistent compliance with company policies and food safety requirements.

Requirements

  • Prior harvest floor knife experience, specifically with a straight knife preferred.
  • Ability to sharpen and maintain a sharp knife.
  • Strong observational skills and attention to detail.
  • Effective verbal and written communication skills in English.
  • Physically capable of repetitive lifting, pushing and pulling.
  • Self-disciplined and mentally engaged in tasks requiring concentration.
  • Willingness to learn anatomy, physiology, and disease processes.
  • Strong team orientation and ability to work collaboratively.

Nice To Haves

  • Experience in food production preferred but not required.

  • Maintain speed and accuracy while working in a high-paced production setting.
  • Collaborate closely with the Sorter Supervisor, USDA-FSIS Consumer Safety Inspectors, and other Harvest floor departments to support regulatory compliance and process flow.
  • Participate in ongoing training, education, and skill-building sessions to maintain current knowledge of food safety and company standards.
  • Demonstrate consistent compliance with company policies and food safety requirements.
  • Perform other duties as assigned.
