About The Position

Kalahari Resorts & Conventions is seeking a Banquet Sous Chef. In this role, you’ll support and assist the Banquet Chef in overseeing the banquet kitchen operation in the preparation of food items for all Banquet meals, hiring, training, scheduling, and directing the banquet culinary staff. You’ll visually inspect all food products to be served to ensure they all meet the quality standards set out by departmental and resort management. Lastly, you’ll ensure cleanliness, sanitation, and safety in the kitchen and storage areas while minimizing waste and maximizing cost/production ratio. Requirements

  • 1+ years of culinary supervisory experience in a banquet setting with 75,000+ sq. ft required.
  • Inventory and purchasing knowledge and control required.

Nice To Haves

  • 1 + years' experience in a high-volume Banquet production kitchen is preferred.
  • Prior experience with P&L accountability and/or managed food service experience with a proven ability to successfully control food costs is preferred.
  • ServSafe® certification is preferred.

Responsibilities

  • Assist the Executive Chef and Banquet Chef in planning and executing banquet menus.
  • Assist with hiring, training, scheduling, and directing Banquet culinary staff.
  • Ensure consistent quality, presentation, taste, and portion control.
  • Monitor food cost and minimize waste.
  • Lead kitchen cleanliness and sanitation practices.
