This position is responsible for understanding therapeutic diets, basic nutrition principles for older adults and veterans, and food safety and sanitation. The role requires knowledge of safe food handling procedures and local, state, and federal food safety regulations. The Baker/Cook will also be involved in menu planning, food preparation, and cooking skills, including the ability to follow standardized recipes, batch cooking, portion control, and preparing meals from scratch using various cooking techniques. Adjusting recipes for texture-modified diets is also a key responsibility. The role demands strong time management skills to coordinate and prepare meals on time for multiple meal periods and efficient multitasking in a fast-paced kitchen environment. Clear communication with dietary aides, nursing staff, and supervisors is essential, as is the ability to document food temperatures and meal changes accurately. Teamwork and adaptability to adjust menus and meals based on resident needs or supply availability are also important. Attention to detail is crucial for accuracy in following diet orders and preventing cross-contamination for allergens.
