Back of House Production Manager
About The Position
Pinkbox Doughnuts is a vibrant and innovative bakery known for its wide variety of unique, made-from-scratch doughnuts and rotating coffee menu. We have locations across Las Vegas and Utah and have been recognized for our quality. We are seeking a high-energy individual to join our team as a Back of House Production Manager. This is a hands-on leadership role responsible for overseeing all aspects of doughnut production, including quality control, recipe adherence, labor and cost management, sanitation, staff supervision, and ensuring the bakery is ready for daily operations. The ideal candidate will lead the bakery and decorating teams to ensure consistent, high-quality production delivered on time. This role requires open availability for shifts that may include days, evenings, late nights, and early mornings.
Requirements
- Bi-lingual — fluent in English and Spanish.
- Minimum 2 years of bakery, commissary, or high-volume kitchen leadership experience.
- Experience supervising teams of at least 15 staff.
- ServSafe certified (active).
- Valid Food Handler card (not expired).
- Experienced with ordering, receiving, pars, and inventory control.
- Skilled in troubleshooting, coaching, and staff development.
Responsibilities
- Lead bakery teams to produce the specified quantity of doughnuts each day.
- Ensure the bakery team adheres to exact quality standards for all recipes.
- Enforce recipe adherence and batch standards.
- Conduct quality control checks across all production stages for appearance, size, consistency, and taste.
- Directly manage bakery personnel, including scheduling, providing day-to-day instructions, general oversight, and performance coaching.
- Control waste, food cost, and labor scheduling within budget.
- Partner with the broader commissary team for training, quality control, inventory, and costing.
- Ensure all safety and sanitation rules are followed, and complete necessary documentation including logs and checklists daily and weekly.
- Validate daily equipment cleaning and maintenance, and oversee weekly deep cleans.
- Coach, train, and supervise staff productivity.
- Report nightly production results and issues to the Director of Production and Commissary Admin.
