About The Position
Hands-on overnight production leader responsible for doughnut production, quality control, recipe adherence, labor and cost control, sanitation, staff supervision, and opening readiness. Leads BOH teams and ensures consistent, on-time, high-quality production.
Requirements
- Bi-lingual — fluent in English and Spanish
- Minimum 2 years bakery or high-volume kitchen leadership experience
- Supervised teams of at least 15 staff
- ServSafe certified (active)
- Valid Food Handler card (not expired)
- Experienced with ordering, receiving, pars, and inventory control
- Skilled in troubleshooting, coaching, and staff development
- Able to work overnight shifts
Responsibilities
- Lead overnight BOH production and execute nightly production plans
- Adjust production pars and ensure opening showtime readiness
- Enforce recipe adherence and batch standards
- Conduct quality control checks across all production stages
- Place orders, manage receiving, and conduct weekly inventory
- Control waste, food cost, and labor scheduling within budget
- Validate daily equipment cleaning and weekly BOH deep cleans
- Coach, train, and supervise BOH staff productivity
- Troubleshoot production, equipment, and staffing issues
- Report nightly production results and issues to GM
