About The Position

The Department of Nutrition, Food Science, and Packaging at San José State University is seeking an Assistant Professor in Dietetics and Nutrition, starting August 2027. This role is for teacher-scholars applying emerging technologies to nutrition, dietetics, and health, including areas like digital health, AI, nutrition informatics, health data science, computational nutrition, and mobile/wearable technologies. The department is an interdisciplinary community focused on preparing students for leadership in nutrition, dietetics, food science, food management, and packaging through teaching, research, and experiential learning. It offers various undergraduate and graduate programs, including an ACEND-accredited Didactic Program in Dietetics and a Dietetic Internship. The department also has a distinctive Packaging program and strong ties to Silicon Valley industries. Faculty will contribute to curriculum development, mentor students, conduct research, and collaborate with partners. Requirements

  • An earned Doctoral degree in Nutrition or a closely related field.
  • Current Registered Dietitian Nutritionist (RDN) credential or evidence to be credentialed by August 17, 2027.
  • Evidence of or potential for university-level teaching effectiveness in dietetics, nutrition or closely related areas.
  • Record of scholarly publications or strong potential for a productive scholarly agenda.
  • Awareness of and sensitivity to the educational goals of a socially and economically diverse student population.
  • US residence and proof of eligibility to work in the United States.
  • Satisfactory completion of background and reference checks.

Nice To Haves

  • Expertise or an emerging research program in health technology, artificial intelligence, digital health, nutrition informatics, health data science, computational nutrition, or related applications to nutrition and dietetics, particularly work that advances ethical, equitable, and evidence-based uses of technology.
  • Professional work experience related to dietetics and nutrition in areas such as clinical nutrition, foodservice, or nutrition education.
  • An active, well-articulated research agenda with potential to secure external funding and develop interdisciplinary collaborations.
  • Demonstrated ability or potential to mentor undergraduate and graduate students in academic, research, and professional development settings.
  • Commitment to reflective and inclusive teaching practices, including adapting in-person and online instruction to engage and support historically underserved students.

Responsibilities

  • Design and teach introductory and advanced undergraduate and graduate courses in nutrition and dietetics.
  • Contribute to the integration of emerging technologies into nutrition and dietetics curricula.
  • Develop and maintain an active scholarly agenda, including pursuing external grant funding, disseminating scholarship, and engaging in interdisciplinary collaboration.
  • Participate in curriculum planning, development, assessment, and revision.
  • Advise and mentor undergraduate and graduate students in academic, professional, and research development.
  • Collaborate with nutrition and dietetics professionals and community partners to support field experiences, graduate student projects, and curriculum development.
  • Participate in professional organizations related to nutrition/dietetics and related fields.
  • Participate in shared governance, including department, college, and university committees and other service assignments.
  • Organize all classes within the Canvas Learning Management System (LMS).
  • Demonstrate awareness and experience in understanding the needs of a diverse student population through inclusive course materials, teaching strategies, and advisement.
  • Comply with mandated reporter requirements under the California Child Abuse and Neglect Reporting Act.
  • Complete Clery Act training and report Clery incidents if designated as a Campus Security Authority (CSA).
  • Complete assigned and required CSU employee training.
