About The Position

The Food and Beverage (F&B) Organization is comprised of over 300 different restaurants that share a commitment to bringing excellence to mountain dining as part of the overall ski experience. We believe that F&B leaders should possess a strong working knowledge of the front and back of house supported by best-in-class central programs, training and support. This is a fast-paced environment that requires exceptional interpersonal skills, as well as someone who is able to maintain composure in stressful situations. As such, The Manager is responsible for executional excellence in both guest and employee experience.

Requirements

  • Minimum 3 years of restaurant experience with at least 1 year at a managerial level
  • High school diploma or equivalent
  • Leadership, problem-solving and multi-tasking skills
  • Working knowledge of MS Office Suite
  • Communication and customer service skills
  • Must be able to lift and carry 40+ lbs.
  • TIPS certification required within 30 days of employment
  • Serve Safe Food Protection Manager certification required within 30 days of employment

Responsibilities

  • Promote and prioritize a strong culture of safety across all culinary operations.
  • Serve as a leader and representative of Keystone Resort by participating in leadership forums and contributing feedback on dining operations, training, and continuous improvement.
  • Lead, develop, and train line staff and interns to meet established performance and culinary standards.
  • Plan menus and oversee food production, execution, and delivery across all Keystone Mountain Dining outlets.
  • Ensure food safety compliance across all operations, maintaining HACCP and ServSafe standards.
  • Oversee kitchen organization, cleanliness, and BOH storage areas.
  • Create, implement, and enforce quality and standard controls throughout all Keystone Mountain Dining outlets.
  • Maintain financial performance through managing food cost, labor, and operational spending.
  • Assist with monthly food inventories, cost transfers, menu costing, capital projects, purchasing, and business reviews.
  • Accurately schedule staff to align with labor budgets, review payroll, labor distributions, and exceptions.
  • Oversee ordering, receiving, inventory control, variance reporting, and cost transfers for all food, beverage, and supplies within the building.
  • Train outlet chefs and uphold culinary standards across all Keystone Mountain Dining outlets.
  • Partner with the Center of Excellence (COE) to maintain and elevate food and beverage standards.
  • Expedite all food service to ensure quality, consistency, and timely execution.
  • Ensure kitchen equipment is properly maintained and operational.
  • Maintain knowledge of all facility opening and closing procedures.
